“Slavutych Shato brewery” is the first in Ukraine, a restaurant with its own mini-brewery, which started production of 28 November 2003. We brew our beer in the classic recipes of the world, soaking up the best traditions and adding bold shades of author identity. The menu offers three basic types of beer, “Silver”, “Gold” and “Platinum”, and one of the seasonal varieties best suited to the mood of our guests: “Oatmeal Stout”, “Inspiration Brewer” (“Wheat”), “Brown El “,” El Ruby “and other
How our beer is born
It all starts with malt – this and the dried germinated barley grain (can be used wheat, rice, oats, corn, etc.). Malt is different: the base, caramel, burnt. This ratio and the characteristics of the malt determines the color and density of the beer.
Malt is ground and mixed with water. The resulting mixture was kept at certain temperatures (62-72-78 ° C) to complete saccharification. During this procedure, the starch is converted into malt sugar.
The liquid is filtered from the remnants of malt. The result is a sweet, like a tea with honey, liquid – wort.
The wort is boiled. At this time hops are added, which not only gives the beer its characteristic bitterness, but also helps to settle “extra” proteins.
The wort is boiled, cooled and pumped into tanks for fermentation, where yeast is added.
Finally – the culmination! Starts the main brewing process – fermentation beer. Yeast “eat up” the sugar and excrete the necessary carbon dioxide and alcohol for the future beer.
The fermentation process lasts 5-6 days. Next, beer yeast was withdrawn, so that they do not spoil the taste and beer proceeds to step fermentation and lighting.
Depending upon the kind of beer, we conditioning it from 16 to 30 days. When the beer is ready, we pump it into a storage tank. From this tank beer falls into the bar column, and from there – to you in the original mug “Slavutych Shato brewery”.
Every guest “Slavutych Shato brewery” can be the witness of beer making, because our brewery is located in the heart of the restaurant and open for the supporters of the taste!
